LUX / EROS Turkey brine recipe

If you don't brine the turkey ain't fine... that's what I always say! 

My Brine recipe:

  • one box of vegetable stock
  • one box of chicken stock
  • 2 onions roughly chopped
  • 3 cloves of garlic crushed
  • table spoon of juniper berries
  • table spoon of coriander seed
  • table spoon of dried ginger powder
  • 1- - 2 cup of salt
  • 3-4 bay leaves
  • 3 lemons cut in half
  • 3 apples cut in half 
  • fresh sage, lavender, rosemary, thyme 

I brine 24 hours in advance in a cooler in my backyard. In a stock pot add the vegetable and chicken stock, salt, Juniper berries, black peppercorns, coriander seeds, garlic, dried ginger, bay leaves, crushed garlic, sliced onion and salt. let it simmer until cooked through. let cool then add to the cooler

In the cooler add enough cold water and ice to almost cover the turkey. Add the lemons, apples and fresh herbs to the cooler as well. When the mixture in the stock pot is cooled down, add it to the cooler. make sure the turkey is completely submerged and let sit over night until ready to cook.
